Hot Cheesy Crab Dip – A family favorite recipe. Created using                   Screen Shot 2016-02-24 at 10.08.06 PM                               Special Lump Crab Meat, gourmet cheeses and finished with vermouth.

House Made Hot and Cheesy Spinach and Artichoke Dip – served with your choice of Pita Chips or Tortillas

Shiitake and Polenta Diamonds: This dish features two comforting elements the Woodsy and meaty flavor of sautéed Shiitake Mushrooms sandwiched between smooth and creamy Polenta

Whole Roasted Red Snapper (Pargo Rojo al Horno) –  Basque Country style preparation of this delicate and tasty fish. Cooked whole, smothered with Onions and Potatoes, and covered in olive oil and garlic, this fish steams its way to perfection.  A dish I learned in San Sebastian Spain, sought by a friend of mine and her father Fried Chicken Bites – Fried Breast Meat served with House Made Sauces (Choose 2: Ranch, SriRacha Mayonnaise, Honey Mustard, BBQ)

Spanish Croquettes (Probably invented in France because of the derivative word croquer “to crunch” Some cultures use them as a means of utilizing left overs. Béchamel Sauce derived delicacies created using Prosciutto Di Parma

Mini Maryland Style Crab Bites – Special Lump, Blue Crab mixed with Sweet Peppers, Scallions, and mixed Herbs and Spices, served with your choice of Sriracha Remoulade Sauce or Tarragon Lemon Dipping Sauce

Individual Beef Wellingtons –  IMG_0686My interpretation of a classic. Puff Pastry filled with Thinly sliced Tenderloin pieces cooked in sweet Madeira Wine and Duxelles (mushrooms)

Homemade Sweet and Sour Meatballs – a combination of beef and pork simmered in a tangy sweet and sour sauce

Basque Country Pork Tenderloin  (Lomo de Credo con Salsa de Creama de Cebolla) – A dish I learned in San Sebastian Spain, thought by a friend of mine and his father. Grainy Mustard encrusted Pork Tenderloin cooked with Olive Oil, Garlic and Onions, finished with pureed Pan Roasted Onions and Cream

Ham and Cheese Pinwheel Bites, Black Forest Ham, Prosciutto and Gruyere Cheese rolled in Puff Pastry and Baked Golden.

Mini Croissant Sandwiches – (Choose two: Ham and Cheese, Chicken Salad, Raspberry Preserves and Cream Cheese)

Mini Sub Sandwiches – 4” choose two: Italian –  Black Forrest Ham, Prosciutto Ham, Genoa Salami, Basil and Provolone Cheese, Roasted Vegetable an assortment of Fresh Roasted Vegetables finished in Oil and Herb,. Fig and Brie – Sweet Fig Preserves meets Creamy Brie for a taste sensation Capri Tomatoes, Fresh Mozzarella, Basil, with Balsamic Glaze, Turkey and Cheese – oven roasted turkey with House Made Spinach and Artichoke Spread

Gourmet Cheese Assortment –                        IMG_0162 (1)                                                                                      Manchego, Asiago, Aged Gouda, Aged Chedda and Goat Cheese, accompanied by Nuts and Dried Fruit served with gourmet crackers and bread

Homemade Bruschetta – Tomatoes, Garlic, Olive Oil and Fresh Basil served on Crostini

Roast Beef and Cucumber on Crostini with Cream Cheese – Rare Roast Beef, fresh Cucumber and authentic Cream Cheese served on Crostini

Grilled and Chilled Veggies – Grilled Vegetables including Mushrooms, Zucchini, Sweet  Peppers, and Asparagus drizzled with Balsamic Vinaigrette.

Caprese Skewers – Marinated, Mini, Mozzarella Balls and Sweet Tomatoes

Southern Smoked Trout Pate on Crostini – Locally Smoked Trout (NC) secrete blend of herbs and and cheeses spread on Crostini

Goat Cheese and Herb Stuffed  Piquillo Peppers – Sweet, Smokey and Piquant all in one bite.

Traditional Veggie Tray – Broccoli Crowns, Organic Baby Carrots, Celery Hearts, Sliced Zucchini, and Cherry Tomatoes served with House Made Blue Cheese and Buttermilk Ranch.
